How Sriracha Truffle 5-Cheese Baked Mac Became My Family's Ultimate Comfort Food: A Delicious Journey of Generational Recipe Evolution
Comfort food has a unique charm that can stir up nostalgia and warmth. For my family, one dish stands out as a symbol of love and togetherness: Sriracha Truffle 5-Cheese Baked Mac. This recipe passed down from my husband's family, evolved over time into a dish that fills us with joy and flavors.
The Foundation
This dish was a staple during the holidays, birthday celebrations, large family gatherings, and any other special occasion. His mom would prepare large trays, pouring her heart into every cheesy layer. Initially, her recipe was simple, calling for just a couple cheeses. Little did I realize, this heartfelt tradition would evolve into a spectacular dish that I now proudly share with my family.
In her foundational recipe, she used only two types of cheese: cheddar for richness, and mozzarella for that gooey stretch, all brought together with a buttery béchamel sauce. This delightful dish was rich enough to satisfy yet light enough to leave room for dessert, making it a perfect family favorite.

A Modern Twist: Adding Sriracha and Truffle Oil
As we matured, we felt a desire to experiment and expand on this cherished recipe. We were interested in incorporating new flavors, while honoring his family's classic version.
The first time I considered altering the recipe was after a few restarurant dates nights that featured luxurious truffle-infused dishes. The rich, aromatic flavor sparked a desire in me to replicate that experience at home. This was around the time in 2017, that Oprah began raving about Truffle Zest, and shortly after Costco started carrying affordable truffle flavored seasonings and oils.
With this new inspiration, I added a splash of truffle oil to the sauce or a sprinkle of truffle zest into the layers. To enhance the creamy richness of the truffle, I chose to introduce Sriracha. This tangy addition brought an unexpected heat that perfectly balanced the dish's richness. The flavor explosion was unlike anything we had tasted before.
The Cheesy Dream Team
When I tasted my new creation, I realized the cheese selection needed an upgrade as well. Experimenting with different cheeses, I eventually discovered a blend that delighted our taste buds.
Sharp Cheddar provided the familiar comfort we all loved with a deeper smoked flavor.
Chive and Onion Cream Cheese adds some additional cream at savoriness.
Low Moisture Mozzarella ensured the right amount of stretchiness.
Monterey Jack pairs well with mozarella to add more creamy texture.
Parmesan Cheese an easy way to bump up the savoury flavor of the dish.
This unique combination of five different cheeses took our mac and cheese experience to a whole new level.
A Shift in the Basics
When we discovered my daughter's intolerance of Cow's Milk Protein when she was 4 weeks old, I was instantly determined to find a way to make this dish with no dairy. I wouldn't be able to go 1 year while breastfeeding without this household staple!
My 2023 version of this recipe called for Vegan alternatives to cheddar, colby jack, mozzarella, cream cheese, and parmesan. I substituted avocado oil for butter, and Thai Kitchen brand whole Coconut Milk for the Heavy cream.
Once I was able to reintroduce dairy to my diet, the regular cheeses and butter returned to the dish, however we said fairwell to Heavy cream, and the Whole Coconut Milk as a permanent addition.
In 2018, we also started omitting the egg due to my son's food allergies, and with the added creaminess of other ingredients, this is not missed.

Looking back on the evolution of our family's Baked Mac, I appreciate the importance of flexibility in our traditions. This beloved dish showcases our shared love for food and how flavors can transform while still honoring their origins. As I prepare every dish, I ensure to blend in that original touch from his mother, spiced with a modern flair that encapsulates our culinary flavor preferences.

The Recipe
Like any recipe taught to me by his mom, we don't measure most of the ingredients... we just wing it, but for those that need exact measurements, here is a guideline, and take it with a grain of salt.
Ingredients
1 box elbow noodles uncooked
1/4 cup butter or splash olive oil
1/8 cup chive/onion cream cheese
1/2 can whole coconut milk
garlic salt/salt, black pepper, sriracha, truffle oil to taste
1/8-1/4 cup sour cream
1/2 cup low moisture mozarella
1/2 cup Monterey Jack shredded
1/4 cup sharp cheddar shredded
1/4 cup parmesan cheese grated
Truffle seasoning
optional: Fresh parsley and/or basil
Instructions
Preheat oven to 350 F.
While noodles are cooking, In a wok or other large pan/pot melt butter/olive oil. Add in the cream cheese and stir/whisk to blend. Then add in the heavy cream, seasonings and sriracha. Stir in sour cream to balance the spice level, let simmer to thicken until noodles are ready.
Cook elbow noodles a little longer than the package states - Barilla, I cook for 10 minutes (3 mintutes past al dente). Turn water off, let sit in hot water for additional 4-5 minutes.
Drain pasta, do not rinse. Then slowly stir the pasta into the sauce and stir to combine.
Important: Sample some of the coated elbow noodles and depending on preference, add more sriracha or seasonings to add flavor, or sour cream to make more mild.
Spray/oil/butter a 9 x 13-inch baking dish.
Add 1/3 of macaroni to the baking dish. Sprinkle/spread out all four shredded/grated cheeses, and choice of fresh truffle seasoning, parsley, basil
Add another 1/3 of macaroni. Sprinkle/spread out all four shredded/grated cheeses, and choice of fresh truffle seasoning, parsley, basil.
Add last 1/3 of macaroni. Sprinkle/spread out all four shredded/grated cheeses.
Bake for 30 minutes uncovered. Do not overbake. It may be a bit jiggly when you take it out of the oven. It will firm up as it cools.
Let cool for about 10-15 minutes or until fully set. Enjoy!
